Chocolate French Toast

If the way to a man’s heart is through his stomach, this recipe for Chocolate French Toast will turn him into your slave for life.

Oh. My. Goodness.

If your sweetheart likes chocolate, you must, must, MUST make this for him. It was delicious – to put it mildly. And it was pretty simple to make, which makes it even better.

Think about making your Valentine a special breakfast and make sure you include this recipe as the focal point!

Ingredients

Cut crusts off bread

Mix egg, milk, sugar, vanilla, salt together and pour into a baking dish or bowl.

Put a piece of bread in and top with half a Hershey's bar.

Put another piece of bread on top and pour batter over to completely cover

Soak bread for a couple minutes then remove to warm skillet. I soaked my sandwiches one at a time and used a square bowl rather than a casserole pan.

Fry until golden brown on both sides

Remove from skillet, slice in half diagonally and dust with confectioner's sugar.

Chocolate French Toast

Chocolate French Toast
3 eggs
1 cup milk
1 tsp. sugar
1 tsp. vanilla extract
1/4 tsp. salt
12 slices day-old bread, crusts removed
3 plain Hershey’s milk chocolate candy bars, halved
2 tbsp. butter
Confectioner’s sugar

In a bowl, beat eggs, milk, sugar, vanilla and salt. Pour half of the mix into a 13 x 9 x 2 inch casserole dish. Arrange six slices of bread in a single layer over egg mixture. Place one piece of chocolate in the center of each piece of bread. Top with remaining bread and pour on the rest of the egg mixture. Let stand for about three minutes. (Note: If you do not have day old bread, toast it a bit to dry it out or cut down the time you let it stand in the egg mixture. You do not want the bread to get soggy because it will result in a mushy mess! Not that I would know these things first hand. But trust me on this one!).

In a large non-stick skillet or griddle, melt butter over medium heat. Fry sandwiches until golden brown on both sides. (If you do not have a skillet large enough to cook these all at once, soak them one at a time in the casserole dish so they do not absorb too much liquid.)

Remove from pan, cut in half diagonally and dust with confectioner’s sugar. Garnish with fruit if desired and watch your sweetheart savor the sweet goodness of chocolate french toast.

Happy Valentine’s Entertaining,

She who needs chocolate

Luscious Orange Panna Cotta

I think I’m going to have to fess up to a case of the winter blahs. Even though we’ve had a few sunny days this week, it has been bitterly cold.

So here it is:

I’m tired of the gray skies. Tired of the cold. Tired of the wind. Tired of dead brown grass. Even tired of the pumpkin/cinnamon/spicy flavors I associate with fall and winter.

Then a blip of sunshine fell into my lap in the form of a luscious, citrusy beautifully summer recipe. So I had to make it as fast as I could and, boy, was that a good decision. Even Captain Cavedweller liked it, which is saying a lot.

This recipe for Luscious Orange Panna Cotta is easy to make and so flavorful and smooth and wonderful and fragrant. It is like breathing in a bit of summer.

If you’ve got a case of the winter blahs, I highly encourage you to make haste and make it right away! You’ll be so glad you did. Just remember, you need to let this rest in the fridge for about 8 hours, so plan accordingly!

First we’ll make the Buttery Orange Curd. Then we’ll whip together the Panna Cotta.

Ingredients for the Curd.

Start off by zesting an orange. This part was really fun because as soon as the zester dug into the orange flesh, the sweet lovely smell of citrus nearly made me melt.

You'll mix sugar and cornstarch then whisk in orange juice and an egg before cooking over medium heat until thick. Remove from heat and whip in butter, salt and orange zest.

The cooked Curd is a wonderful sunshiny color and the aroma is magnificent.

Buttery Orange Curd

2/3 cup sugar

2 ½ tbsp. cornstarch

1 1/3 cups orange juice

1 large egg, lightly beaten

3 tbsp. butter

2 tsp. orange zest

Pinch of salt

Combine sugar and cornstarch in a 3-quart saucepan. Gradually whisk in orange juice. Whisk in egg. Set on medium burner and bring to a boil, whisking constantly, and cook three to four minutes or until mixture starts to thicken.

Remove from heat then whisk in butter, zest and salt. Place heavy-duty plastic wrap directly on the curd, to prevent a film from forming, and chill eight hours. Store leftovers in the fridge for up to three days.

Ingrdients for Panna Cotta

Stir gelatin into milk and let rest while you cook the cream mixture.

Mix togehter cream, sugar and orange rind, cook over medium heat until sugar is completely dissolved.

Remove from heat and add vanilla and gelatin mixture and remaining milk.

Remove the rind. I promise I used a spoon to fish it out!

Luscious Orange Panna Cotta

A silky custard, made without egg…

1 3/4oz envelope unflavored gelatin

1 cup cold milk, divided

3 navel oranges, divided

1 ¾ cups heavy cream

¼ cup granulated sugar

½ tsp. vanilla extract

¼ cup sparkling sugar

Sprinkle gelatin over ¼ cup milk in a small bowl. Stir until moistened. Let stand five minutes (it will be lumpy).

Removed three 2×1 inch strips of rind from an orange with a peeler.  Make sure you have properly washed your orange before peeling off rind.

Cook heavy cream, granulated sugar and orange rind strips in a saucepan over medium-low heat, stirring occasionally for about four minutes or until sugar is dissolved. Remove from heat and add gelatin mixture, stirring until completely dissolved. Add in vanilla and remaining ¾ cup milk. Stir in then discard orange strips.

Pour mixture into six 4-ounce dessert glasses or wineglasses. Cover with plastic wrap and chill eight hours.

Section an orange and coat individual segments in sparkling sugar.

Peel and section remaining oranges. Make sure you have removed all the peel and bitter white pith. Roll orange sections in sparkling sugar.

Top Panna Cotta with Buttery Orange Curd and sugared oranges. Garnish with a dollop of whipped cream. May be stored in fridge for up to three days.

Luscious Orange Panna Cotta - I promise it is worth every bit of effort you put into it (and it is really pretty easy to make!).

Enjoy and Happy Entertaining!

Each year about this time, I start to go into a mode of semi-panic trying to think of a special gift for  Captain Cavedweller, my beloved Hubby, He.

As I mentioned before Christmas, he is nearly impossible to shop for.  What to buy for a guy who’s main hobby is tormenting his wife, who is outdoorsy and extremely picky?

I did some researching online and I found a whole boatload of things not to buy him. Like the matching monogrammed pillowcases. The his and hers mugs. Satin boxers emblazoned with hearts. A heart-shaped key chain. Nope, those won’t do at all!

So here are some gifts my Hubby might actually appreciate… maybe, sort of. Oh, I surely hope so!

One of my favorite new places to shop (and play) online is Shutterfly. I made a book for my Dad for his 80th birthday and he was nearly beside himself excited about it. The quality is amazing and the design options are nearly limitless. Shipping time is a few quick days. I can’t tell you how much fun I’ve had with this. What a great way to say I love you by creating a photo or memory book for your sweetheart. I may or may not have gotten completely sappy and made one for Hubby.

If your one true love is into puzzles, you can create a really awesome gift at Personalization Mall with a photo puzzle. There are many shapes, sizes and options available to customize your gift.

Links 2 Love has some really interesting and unique gift ideas. I thought this one was especially wonderful. It looks like a credit card but is a Frequent Kisser Reward Card that can be redeemed for one hug or kiss anytime. How sweet is that?

You know that old saying ” the way to a man’s heart of through his stomach?” I know several men, He included, who make that old saying accurate! This awesome cookie bouquet can be found at Valentine Cookie Recipes. I know one of Hubby’s favorite cookies are sugar cookies. They are easy to make and so very tasty. So whip up a batch for your honey, cut them in heart shapes and decorate.  Or write a sweet message on the cookie for your Valentine and watch his heart melt (after he has time to consider the message as he’s brushing off the crumbs of the cookie he consumed in 5.6 seconds).

Think about things he-who-makes-your-heart-pound would enjoy and I know you’ll find just the right gift!

Happy Valentine’s Gift Shopping!

She who is way too sappy
