In celebration of Cinco de Mayo, here is a fun little recipe for fruit salsa with cinnamon chips.

It didn’t take long to make and was so fresh and fruity. Since I made it before dinner last night, it is possible that Captain Cavedweller and I may have eaten every bite of this before we got dinner on the table.

Maybe.

Yeah, it was really tasty!

Ingredients

 

Chop strawberries…

 

and kiwi…

 

and oranges.

 

 

Mix reserved orange juice with honey. Pour over fruit and mix well.

Butter tortillas and cut into chip-sized pieces

 

Sprinkle cinnamon and sugar on chips and bake at 350 for 5-7 minutes, until chips are crispy.

 

Devour in bliss.

Fruit Salsa

1 cup chopped strawberries

1 cup chopped kiwi

1 can mandarin oranges (reserve juice)

6 flour tortillas (8-inch)

2 tbsp. honey

cinnamon

sugar

butter

Use fresh strawberries and kiwi for intense, delightful flavors. Chop into small pieces. Chop mandarin oranges. Mix 1/3 cup of the juice reserved from the oranges and mix with the honey. Pour over the fruit and let rest while tortillas are cooking.

Butter tortillas then cut into chip-sized pieces. Sprinkle with cinnamon and sugar. Bake in a 350 oven for 5-7 minutes, until chips are crispy. Serve immediately and enjoy the bliss of the warm cinnamon chips with the fruit!
