The other day Hubby and I actually had a small window of time to have breakfast together. Wanting something filling and fast, I decided to whip up a skillet of eggs and sausages. We happened to have several leftover brats from a barbecue the evening before, which worked perfectly.

Ingredients for Eggs and Sausages. Please ignore the fact this package of brats is frozen.

You will want to use pre-cooked sausages. You can use whatever kind of sausage you like, we just happened to have brats on hand. I use a two egg and one sausage per person ratio. Except with Hubby, then it is more like two sausages and one egg. Oh, my.

Thinly slice the sausages and toss in a skillet over medium heat with a heaping spoon of butter. Let them get hot and then add your eggs. Stir around until eggs are set and serve.

Raspberry Crisp

Here’s a recipe for a quick and easy crisp that can be used with a variety of fruit. It works well with everything from apples and peaches to berries.

Since I love raspberries (and it was what I had at the 11th hour when I decided to throw this together) that is what I am featuring today.

Start with your basic ingredients.

Mix a heaping spoon of cornstarch and some sugar into the berries. Let this rest for about 10 minutes. Note - I am using frozen berries, so just pretend they are fresh. They'd be so much prettier!

Mix up your crumb topping while the berries are resting and then sprinkle it on top of the berries. Bake and try to keep yourself from self-destructing while waiting for the crisp to get done.

Enjoy the finished crisp warm with a scoop of melting ice cream or a dollop of whipped cream.

Berry Crisp

3 cups of raspberries (you can use any type of berry or fruit)

2/3 cup granulated sugar

1 tablespoon corn starch

1/2 cup flour

1/2 cup oatmeal

1/2 tsp cinnamon

1/3 cup butter – softened

3/4 cup packed brown sugar

Pre-heat oven to 350 degrees.

Mix corn starch and granulated sugar with berries. Let rest for about 10 minutes.  I mix this right in the baking dish – using a square 8-inch pan. While the berries are doing their thing, mix the remaining ingredients together with a pastry blender, food processor or a fork. You want the mixture to have a crumbly texture. Sprinkle on the berries and bake until fruit bubbles and topping is a golden brown.

Serve warm with ice cream or whipped topping.

Today’s recipe is going to be super fast and easy, because that is just the kind of day it is!

I made these fruit skewers a few weeks ago for a party and not only were they a hit, they came together quickly and looked beautiful on the serving table. A winner all the way around!

You’ll need a watermelon, cantaloupe, skewer sticks, a melon baller and some grapes for garnish.

Slice open the melons, scoop out the cantaloupe seeds and whip out your handy-dandy melon baller.  I love mine. You can use it for making mini cookie scoops, for digging out pumpkin guts, for scooping slushy fruit drinks into glasses. Today, though, use it to make perfect little balls of sweet, juicy melon. As you make the balls, scoop them into a bowl. If your melons are less-than-perfection ripe, do this the night before you need them, sprinkle with sugar, stir and let rest overnight in the fridge.  That sprinkling of sugar will give them a great flavor of they need a bit of help.

Once you’ve got the melon balls all scooped, start threading them on skewers, alternating a watermelon ball with a cantaloupe ball. Layer the skewers on a tray and fill in the center with red and green grapes.  The skewers make the fruit easy to handle, especially if you are serving all finger-foods.

This is a great way of presenting summer fruit and it makes it look like you went to a lot of fuss, when really you didn’t!
