Last night for dinner we had frozen eggs and scrambled popsicles.

Huh?

I mean scrambled eggs and frozen popsicles.

See, between washing all of Captain Cavedwellers winter wear and the heat that is suffocating me in our air-conditioner-less house, I can’t think straight. Or sideways. Or any other way.

So last night for dinner, after slowly melting into a mass of overheated sluggishness, Captain Cavedweller decided to whip together some dinner. Seriously, we ate eggs and popsicles. And then had seconds on popsicles.

Since I am incapable of stringing together my thoughts long enough to take photos and post a recipe, I will direct you to a recipe on The Pioneer Woman’s website.

For some reason, it is the only thing that sounds even remotely appealing today.

I don’t know about you, but I can’t believe it is August.

What happened to June and July? I think they got skipped somewhere because there is just no way I could have possibly lost the past 61 days.

In an effort to wring every drop of summer left out of this season, why not throw a fun Flip Flop themed party.

Keep everything very casual.

Set up a buffet outside, serve something simple like hamburgers or a make-your-own taco bar. Have plenty of cold beverages. In addition to bottles of soda or water, filling small canning jars with lemonade or sweet tea, secure lids in place and nestle into ice for a versatile and easy beverage station.

Encourage your guests to wear their flip flops and have a contest. Who has the ugliest? Prettiest? Oddest? Oldest? Give away some creative prizes. You could even pick up inexpensive gifts at the dollar or craft store. I know the last flip flop party theme I did, I found some great gifts like a note pad in the shape of flip flops as well as decks of cards shaped like flip flops.

I also made this cake from Betty Crocker’s website. It was a huge hit. There is even a how-to video you can watch.

Invite over some friends and have an entertaining evening at home.

One of my sisters-in-law is celebrating her birthday this week. I’ll refrain from telling you her age to preserve my own well-being. But I will say she is the same age as my second brother who is two years younger than my oldest brother who is twenty years younger than my dad who is 40 years older than me.

Got all that? Great!

Anyhoo… the point of all my rambling this morning is to share a link to a fun cookbook I purchased for Debbie’s birthday.

The Cowgirl’s Cookbook by Jill Charlotte Stanford is a great little cookbook especially if you are into cowboy or western lore. That would be the reason I purchased it for my sister-in-law in the first place. You can find the book at Amazon for $9.95.

In addition to some really fun recipes, Stanford has awsome quotes, tidbits of information and stories about cowgirls on each page. There are also a bunch of great photos included.

If you know someone who likes western memorabilia, collects cookbooks or is into the history of the women of the west, this would be an excellent gift.

Roasted Zucchini

Captain Cavedweller will only eat zucchini if it has been dipped in batter and deep fried.

Until I roasted a zucchini the other day.

Don’t ask me what is magical about the fast roasting process, but it makes the zucchini taste so good.

And talk about fast and easy. In less than 10 minutes you can make this side dish and have it ready to eat.

Basic ingredients

Pour a tablespoon or so of EVOO into a ziploc bag.

Add a dash of salt and some seasoning to the oil.

Put zucchini into the bag and shake it a few times to coat.

All nicely coated and ready to dump onto baking sheet.

Spead out the zucchini on the baking sheet.

Bake in 400 degree oven for about five minutes.

Baked, tender and ready to be devoured.

Roasted Zucchini

Zucchini, cut into slices

Dash of Salt

Dash of Seasoning

Extra Virgin Olive Oil

Pour a tablespoon or two of oil into a ziploc bag. Sprinkle in a dash of salt and some seasoning. Put in zucchini slices, seal and shake bag to coat slices. Place slices on a baking sheet and bake at 400 degrees for about five minutes. Serve and enjoy!

You can use this method with a variety of vegetables including carrots and beets (which will need a longer baking time).
