I was desperate for something fruity and light and delicious the other day to make for a party. So I decided to finally give fruit pizza a try.

Why didn’t someone tell me how perfectly wonderful and easy to make this is? Why have you been holding out on me?

Needless to say, I will definitely be making this again.

Ingredients for Fruit Pizza. The blob in the pan is sugar cookie dough, cooked longer than it should have been, thanks for asking.

Mix whipped cream cheese with powdered sugar for the filling.

Spread over your sugar cookie crust. I would mention at this point that you should cut your pizza into slices or bars at this point.

It was not so much fun trying to cut through all the fruit.

If you are using berries and they are not in season, you can bring out their flavor by slicing and sprinkling with sugar. Let rest at room temperature about 20 minutes. I’m fairly certain people think I am nuts when I purchase berries because if they don’t smell like berries, they aren’t going in my cart. Go ahead, sniff a carton and see how many strange looks you get over in the produce department.

Once you’ve got the pizza, start layering on the fruit.

Keep on layering all that fruity goodness.

Arrange on a platter and watch them disappear!

Fruit Pizza

Sugar cookie crust, baked (you can make from scratch or be lazy like me and purchase a tube of cookie dough

1 cup whipped cream cheese

1/2 cup powdered sugar

1 banana, sliced

1 kiwi, peeled and sliced

1 cup sliced strawberries

1/2  cup grapes, sliced in half

1 can mandarin oranges

Bake your sugar cookie crust and let cool completely. You can use a round pizza pan or a baking sheet. I knew I was serving this on a rectangular platter so cutting it into squares made more sense.

Mix together cream cheese and sugar. Remove crust from pan then spread with whipped cream cheese. Slice.

Top with sliced fruit and serve.

How easy is that!

A while back my friend Colleen, that would be the beautiful redhead on the left, asked me if I would be interested in co-hosting a party to help her friend Katie, the sweet blond on the right, jump start a new direct sales business. Having started two separate direct sales businesses, I know how much those first few parties can help a newbie. And Katie joined a great company that offers the most fabulous products.

How could I say no?

So here was the deal: I’d take care of the food and Colleen would do all the real work. I felt a little guilty about it, but managed to suck it up and forge ahead. In case you missed the recipes, you’ll want to try the Tortellini Bites and Lemon Cookies. So easy and impossible to stop at just one.

Several lovely ladies came and joined us for an afternoon of fun and learning all about Private Quarters.

It is so blissful, in fact, that I ordered a few of those seven layers of bedding and have now decided I must give my bedroom a mini-makeover to go along with the beautiful new goodies that will be arriving soon.

Happy Spring!

Even though it is cloudy and cool and trying to rain here today, I can’t tell you how excited I am that it is officially spring!

Hooray!

Spring means green grass, cheery daffodils nodding their little golden heads and breezes that carry more warmth than chill. It is budding trees, and the loamy smell of earth coming back to life after a long winter’s rest. It’s lemony treats, fresh paint and dust motes dancing in streams of sunlight while you deep clean.

What does spring mean to you? What signifies spring in your corner of the world?

Tortellini Bites

The other day I needed to make some appetizers for a party and decided I would try something different. That different turned out to be really very tasty and so simple using some easy to find ingredients and a few minutes of my time.

Give these little tortellini bits a whirl. Your taste buds will thank you repeatedly. Especially if you are a pasta fan.

Just three ingredients, plus a bottle of salad dressing and you are good to go!

Cook tortellini according to package directions, drain, rinse and cool. Add dressing, cover and refrigerate for at least an hour. Overnight is even better. I used mozzarella balls packed in water, drain the water, add in dressing and marinate.

Tortellini, ready for skewering!

Just thread them on the pick (which I found at the dollar store for a jar of 50).

 

 

Add mozzarella ball and a calamata olive.

 

Arrange on a platter and watch them disappear!

Tortellini Bites

1 bag cheese-filled tortellini

1 container mozzarella cheese balls or cubes

1 container calamata olives

1 cup olive oil/vinaigrette dressing (or Italian)

Cook tortellini according to package directions. Drain, rinse and cool. Drain mozzarella balls if they come pack in water. Add dressing to both the cheese and the pasta. Cover tightly and refrigerate for at least an hour, overnight is even better. The more time they have to marinate in the dressing, the yummier they taste.

Assemble using toothpicks or mini skewers. Thread on one tortellini, one cheese ball and finish with an olive. Arrange on a platter and stand back to watch the crowd go wild. It is nearly impossible to eat just one, unless you are Captain Cavedweller who refuses to eat tortellini, calamata olives and anything marinated in vinaigrette dressing.
