Normally, when I look across the road from our house, I see acre after acre of beautiful apple trees highlighted by the hills in the distance.

When I drove home tonight, the wall of boxes started about a quarter or mile from our house and continued just past our field of vision. It is literally boxes as far as the eye can see.

And although our fabulous view has temporarily turned into a fortress of plywood containers, I don’t mind. It is fun to see all the activity over in the orchard. Summer apples make me think of my grandma who was born and raised in the Ozarks. She had a summer apple tree in her yard and my mom would take us to grandma’s when the apples were ripe to pilfer enough to make a pie. Grandma would have something delicious like fried chicken and blueberry pie for us to eat – and nobody made chicken like her chicken. It was legendary.

The apples were a yellowy-green and tart. They weren’t big by any standard, but good gracious, they could make a tasty pie.

So here is to summer apples, fried chicken and grandmas. May they be a part of your best summer memories.

When I travel, I always take my beautiful little netbook computer with me. It is lightweight, easy to use and makes staying connected a breeze. I can upload photos, write my blogs and often times, if we are driving, Captain Cavedweller tunes into his sports radio while I pop in my ear buds and type away on my next story.

The only thing I have not liked about my netbook is trying to finagle the controls without a mouse.

For Christmas, Captain Cavedweller gave me a wireless mouse. I loved it the minute it came out of the package. Where had it been all my life? No more cords, no more tangles and tethers. It was awesome. So when we were packing up to go on vacation, I meant to take my wireless mouse with me and, as the way things go when you are hurriedly packing the night before you are about to leave for a week, I forget to grab it.

Captain Cavedweller, being the wonder that he is, stopped and got me a wireless mouse the next morning. I thought it was the cutest thing ever. I call it mini mouse. It truly is a miniature version of a full size mouse, and fits right into my netbook case. How convenient is that?

Sometimes all our newfangled technology really makes me smile.

The other day I was flipping through a magazine and it had a cute little article about how one family makes their girls a princess for the day on her birthday. It just struck me as a fun and wonderful thing to do.

Then I had a deliciously wonderful thought.

Why can’t big girls be a princess for the day, too?

How many of you would like to be princess for a day? Raise those hands!

Most of the women I know look for a reason to get together on a regular basis. They play bunco, have book clubs, cooking clubs or meet for a night out once a month.

But what if we had a princess club? What if every month a group of women got together and one of them got to be the princess and be pampered and treated like royalty by her friends? How fun would that be?

Captain Cavedweller has heard me comment more than once that if someone would give me a cape and a magic wand, there is no telling what might happen. I think I’m ready to find out.

I must issue a warning that today’s salad might not be the most healthy you could choose -but the tastiness more than makes up for it!

Sticking with the Patriotic Theme, this salad is a fun pop of color for your 4th of July table and it comes together quickly!

Start by drenching mozzarella slices in flour.

Then coat them with beaten egg.

And finish off the coating with Panko bread crumbs mixed with shredded Parmesan cheese. If you enjoy nuts, you can add chopped toasted pecans here. For someone allergic to nuts, not such a great option.

Start getting your oil hot for frying while you finish battering the cheese slices. Aren't they pretty?

If you have a deep fat fryer, great. If not, use a heavy cast iron skillet and heat the oil until bubbling hot. Carefully fry the cheese. It took just seconds to cook both sides.

I whipped together a dressing using raspberry juice, vinegar and olive oil. If I hadn't decided to make this at the last second, I would have used a bottled raspberry vinaigrette.

Put down a bed of spinach leaves then toss on some raspberries and blueberries. Top with your dressing.

Place cheese on salad and enjoy if you haven’t devoured the cheese before it makes it to the salad. Even Captain Cavedweller, who does not like cheese, ate more than his share (including some of mine).

 

Fried Mozzarella Salad

Sliced Mozzarella Cheese

Flour

Egg (beaten)

Panko Crumbs

Parmesan Cheese (shredded)

Salt

Spinach

Raspberries

Blueberries

Raspberry Vinaigrette

Prepare spinach and berries and set aside.

Put flour in one bowl, beaten egg in a second and the panko crumbs mixed with the Parmesan cheese and salt in a third. Make sure the bowls are wide enough your cheese slices will sit flat inside.

Heat oil in a deep fat fryer or cast iron skillet. You want it to be good and hot.

Drench cheese slices through flour, egg and panko mix. When they are all finished, start frying. It will take just a few seconds to brown each side. The smell will begin to weaken your knees. Should you give in to temptation and take a bite, you may never get the cheese onto the salad.

Drizzle dressing over spinach and berries then top with a slice or two of the cheese.
