This weekend, I finally got around to baking sugar cookies.

I was pretty sure one of us was going to founder on them and it wasn’t me.

Despite the fact Captain Cavedweller isn’t a big sweet eater, there are a few treats that he can’t pass up.

Sugar Cookies are definitely on the short list.


Here is the recipe. These take a little time and effort but it is well worth it!

Sugar Cookies

1 cup butter

3/4 cup sugar

1/2 cup powdered sugar

2 eggs

1 tsp. vanilla

dash of lemon juice

1 tsp. baking powder

1 tsp. salt

2 1/2 cups flour


Cream together butter and sugars. Add in eggs, vanilla and lemon juice. Mix dry ingredients together and gradually add into creamed mixture. Cover with plastic wrap and refrigerate for an hour (or overnight).

Preheat oven to 375 degrees.

Generously flour a flat surface and your rolling pin. Scoop out half the dough and roll until about 1/4 inch thick. You want to work fairly quickly at this point because the warmer the dough gets the stickier it becomes and you don’t want to add more flour. Cut into shapes and bake about 6-8 minutes or until cookies are just set. You do not want them to get brown at all. Cool in pan for one minutes. Remove to wire rack to cool completely. Frost and decorate then watch them disappear.

You can use a royal icing if you are of a mind to stir up a batch or, if you are a lazy slug like me, I whip out a can of Betty Crocker vanilla frosting and frost away. I also like to use decorator gels, especially the sparkly variety, along with sprinkles!

Captain Cavedweller and I were in Las Vegas all last week.

It was warm, sunny and absolutely wonderful.

We came back to cold, fog, spitting snow and more cold.

I think I’m ready to go back.

While in Vegas, we took in a lot of  holiday decorations. I think my favorites were at The Bellagio in the Conservatory.


There were hundreds of gorgeous poinsettias. I especially liked these ruffled beauties.


And penguins.

PENTAX ImageThey were so fuzzy (along with being animated) they seemed lifelike.

PENTAX ImageA fantastic gingerbread village (that used 600 pounds of chocolate) filled the center section of the area, along with a huge rocking horse.



But my most favorite, favorite decoration was the polar bears.


They were made of white mums and absolutely amazing!


Not only were they huge and impressive, they were kept fresh daily by a team that pulled out any wilted flowers and replaced them.

Irving Berlin wrote this song for the movie White Christmas. I loved it the first time I heard it and I love it still.  It reminds me not to worry, and to be thankful.

At some point during the hustle and hurry of the holiday season, I like to take a quiet moment to think about how very blessed I am. Due to something tragic that happened to a friend yesterday, I am truly counting my abundant blessings this morning.

So often we get caught up in the craziness of our every day lives that we forget how very blessed, how truly fortunate we are for all that we have. I am often guilty of looking at things with a “grass is greener over there” eye. But today, especially today, I am grateful for every single nutty, crazy, challenging, wonderful, warm, loving person and thing in my life.

I’m thankful to all of you, as well. Your encouragement and continued support of my ramblings is a blessing to me.

Count Your Blessings and take some time just to enjoy those you love today.
