This salad is easy to whip together and a perfect go-to for potlucks, picnics or anytime you really don’t want to cook. Add pieces of cooked chicken and you’ve got a meal ready to eat!

Ingredients

 

Microwave vinegar, oil and orange juice. Stir in seasoning packets. Set aside.

Mix oranges with coleslaw (or cabbage). Add in crushed noodles.

 

Pour dressing over salad, stirring well to coat. Cover tightly and refrigerate overnight.

Chinese Noodle Salad

1 bag of coleslaw mix or about six cups of shredded cabbage

2 packages of Ramen Noodles (chicken flavor)

1 large can Mandarin Oranges

1/2 cup sliced almonds

1/2 cup vinegar

2/3 cup oil

Drain oranges, reserving juice in a micro-wave safe bowl. Add oil and vinegar to juice and microwave about a minute, stirring to mix well.  Stir in the seasoning packets from the noodles until well blended. Set aside.

Mix coleslaw with oranges. Crush noodles and add to bowl, uncooked. Pour dressing over the top, mixing well. Cover with plastic wrap and refrigerate overnight. Before serving, give the salad a good mix then stir in almonds and serve!

The other day I decided to make something different and fun and exciting for our bored taste buds. Digging through my cache of recipes, I decided it had been forever and a day since we’d eaten Spaghetti Carbonara.

I originally got the recipe from my friend Jolene who is a fabulous cook. I tweaked the recipe just a bit and came up with one I like and Captain Cavedweller will eat – a double winner!

It is easy to make and comes together fairly quickly. Serve with warm bread and a crisp green salad and you’ve got a fantastic meal.

 

Ingredients

 

Bring salted water to a boil then add noodles. Cook al dente.

 

Chop bacon into small pieces and cook in large skillet.

Cook until slightly crispy. Save all that wicked bacon grease in the pan. Remove bacon pieces and drain on paper towels. Set aside.

 

Cook sausages in bacon grease, turning to brown each side. When brown, cover with water and let simmer for about 12-15 minutes until cooked through.

 

Add cream, Parmesan cheese and beaten eggs to noodles. Stirring quickly to keep eggs from going all weird on you.

Add bacon and return pan to low heat, stirring to coat noodles and cook eggs.

 

Top with some chopped parsley and enjoy!

 

Spaghetti Carbonara

1 pound spaghetti

1 tbsp. olive oil

1 tsp. salt

6 slices bacon

4-6 sausages

1/2 cup cream

1/2 cup Parmesan cheese

2 eggs, beaten

2 tbsp. fresh chopped parsley

Bring a large pot of  water to a boil with salt, add spaghetti and cook until al dente. Drain well. Toss with  olive oil, and set aside.

Chop bacon into small pieces and fry in a large skillet until slightly crispy. Remove from skillet and drain. Set aside.

Using remaining bacon grease fry sausages until brown on all sides, then cover with water and cook for about 12-15 minutes until cooked through. Italian sausages would be best but you can use whatever you have on hand.

When sausages are nearly finished cooking, add beaten egg, Parmesan cheese and cream to noodles, stirring vigorously to keep the egg from getting all funky on you. Add bacon and return to low heat, stirring to coat all noodles and to make sure eggs are cooked before serving.

Sprinkle fresh parsley (or dried if you don’t have any fresh) over the top and serve with sausages.

Yum!

Browsing on Pinterest the other day, I was looking for a brownie recipe that was new and exciting and different.

I found approximately 297 I wanted to try right then, but instead decided to combine a couple of recipes I found and see how it went.

It went well. Really well. Quite tasty, even.

So here is what I came up with!

Ingredients – minus the powdered sugar because I’m a dork and forget to get it out when I took the photo.

 

Mix brownies according to package directions and pour half of batter into prepared baking pan.

 

Combine coconut, cream cheese, sugar and vanilla until well blended.

 

Spread on top of brownie batter.

 

Spoon remaining batter on top of coconut and bake until set – about 35 minutes at 350 degrees.

 

Pour frosting over brownies, top with almonds and enjoy!

Yum!

Coconut Cream Brownies

1 box brownie mix

1 cup sweetened flake coconut

1 8-ounce package cream cheese, softened

1/2 cup powdered sugar

1 tsp. vanilla

1 can chocolate frosting

sliced almonds

Preheat oven to 350 degrees.

Mix brownies according to package directions. Spread half of mix in a greased 8 1/2 x 14 baking pan. Mix coconut, cream cheese, sugar and vanilla until well blended. Spoon over brownie batter. Top with remaining batter and bake at 350 degrees for about 30-35 minutes or until brownie batter is set. Do not over cook. You can take this out just before it seems quiet done and it should be perfect.

Let cool.

Microwave about 1/2 to 2/3 cup of the frosting for 10 seconds and pour over cooled brownies. Top with sliced almonds and serve.

In celebration of Cinco de Mayo, here is a fun little recipe for fruit salsa with cinnamon chips.

It didn’t take long to make and was so fresh and fruity. Since I made it before dinner last night, it is possible that Captain Cavedweller and I may have eaten every bite of this before we got dinner on the table.

Maybe.

Yeah, it was really tasty!

Ingredients

 

Chop strawberries…

 

and kiwi…

 

and oranges.

 

 

Mix reserved orange juice with honey. Pour over fruit and mix well.

Butter tortillas and cut into chip-sized pieces

 

Sprinkle cinnamon and sugar on chips and bake at 350 for 5-7 minutes, until chips are crispy.

 

Devour in bliss.

Fruit Salsa

1 cup chopped strawberries

1 cup chopped kiwi

1 can mandarin oranges (reserve juice)

6 flour tortillas (8-inch)

2 tbsp. honey

cinnamon

sugar

butter

Use fresh strawberries and kiwi for intense, delightful flavors. Chop into small pieces. Chop mandarin oranges. Mix 1/3 cup of the juice reserved from the oranges and mix with the honey. Pour over the fruit and let rest while tortillas are cooking.

Butter tortillas then cut into chip-sized pieces. Sprinkle with cinnamon and sugar. Bake in a 350 oven for 5-7 minutes, until chips are crispy. Serve immediately and enjoy the bliss of the warm cinnamon chips with the fruit!
