Browsing on Pinterest the other day, I was looking for a brownie recipe that was new and exciting and different.

I found approximately 297 I wanted to try right then, but instead decided to combine a couple of recipes I found and see how it went.

It went well. Really well. Quite tasty, even.

So here is what I came up with!

Ingredients – minus the powdered sugar because I’m a dork and forget to get it out when I took the photo.

Mix brownies according to package directions and pour half of batter into prepared baking pan.

Combine coconut, cream cheese, sugar and vanilla until well blended.

Spread on top of brownie batter.

Spoon remaining batter on top of coconut and bake until set – about 35 minutes at 350 degrees.

Pour frosting over brownies, top with almonds and enjoy!

Yum!

Coconut Cream Brownies

1 box brownie mix

1 cup sweetened flake coconut

1 8-ounce package cream cheese, softened

1/2 cup powdered sugar

1 tsp. vanilla

1 can chocolate frosting

sliced almonds

Preheat oven to 350 degrees.

Mix brownies according to package directions. Spread half of mix in a greased 8 1/2 x 14 baking pan. Mix coconut, cream cheese, sugar and vanilla until well blended. Spoon over brownie batter. Top with remaining batter and bake at 350 degrees for about 30-35 minutes or until brownie batter is set. Do not over cook. You can take this out just before it seems quiet done and it should be perfect.

Let cool.

Microwave about 1/2 to 2/3 cup of the frosting for 10 seconds and pour over cooled brownies. Top with sliced almonds and serve.

In celebration of Cinco de Mayo, here is a fun little recipe for fruit salsa with cinnamon chips.

It didn’t take long to make and was so fresh and fruity. Since I made it before dinner last night, it is possible that Captain Cavedweller and I may have eaten every bite of this before we got dinner on the table.

Maybe.

Yeah, it was really tasty!

Enjoy!

Ingredients

Chop strawberries…

and kiwi…

and oranges.

Mix reserved orange juice with honey. Pour over fruit and mix well.

Butter tortillas and cut into chip-sized pieces

Sprinkle cinnamon and sugar on chips and bake at 350 for 5-7 minutes, until chips are crispy.

Devour in bliss.

Fruit Salsa

1 cup chopped strawberries

1 cup chopped kiwi

1 can mandarin oranges (reserve juice)

6 flour tortillas (8-inch)

2 tbsp. honey

cinnamon

sugar

butter

Use fresh strawberries and kiwi for intense, delightful flavors. Chop into small pieces. Chop mandarin oranges. Mix 1/3 cup of the juice reserved from the oranges and mix with the honey. Pour over the fruit and let rest while tortillas are cooking.

Butter tortillas then cut into chip-sized pieces. Sprinkle with cinnamon and sugar. Bake in a 350 oven for 5-7 minutes, until chips are crispy. Serve immediately and enjoy the bliss of the warm cinnamon chips with the fruit!

If you want a fast, yummy dessert that will make your family smile. Here it is!

This peach crisp comes together in a jiffy but tastes like bright bites of summer in your mouth.

Ingredients for Peach Crisp

Sprinkle peaches with corn starch and sugar. I added in cinnamon, just because it sounded like a good idea. It was.

Mix remaining ingredients until crumbly.

Sprinkle topping over peaches.

Completely cover the crisp with the crumb topping.

Bake until bubbly and the crumb topping is a golden brown.

Peach Crisp

3 cups of peaches (fresh preferred, canned works, too)

2/3 cup granulated sugar

1 tablespoon corn starch

1/2 cup flour

1/2 cup oatmeal

1/2 tsp cinnamon

1/3 cup butter – softened

3/4 cup packed brown sugar

Pre-heat oven to 350 degrees.

Mix corn starch and granulated sugar with peaches. (If using canned peaches, drain completely.) Let rest for about 10 minutes.  I mix this right in the baking dish – using a square 8-inch pan. While the peaches are hanging out with the sugar and cornstarch, mix the remaining ingredients together. You want the mixture to have a crumbly texture. Sprinkle on the peaches  and bake until fruit bubbles and topping is a golden brown.

Serve warm with ice cream or whipped topping.

Captain Cavedweller brought home some delicious strawberries the other day. They were big, plump, juicy and ripe. They actually tasted like strawberries  – not like the somewhat bland picked-green variety we usually find in the stores this time of year.

Since I can’t leave well enough alone, I decided to stuff a few berries for fun. That was a tasty decision.

This is a fast and easy way to make your berries look super fancy and divine.

You'll need berries, whipped cream cheese, powdered sugar and chocolate for dipping. Chocolate is optional. Unless you're me. Then it is mandatory and necessary.

Cut the tops off the berries and hull. Mix together cream cheese and powdered sugar and then use a teaspoon to stuff filling into berries. I got involved with the stuffing and forgot to take pictures. Sorry!

You can melt some chocolate and dip the ends of your berries in it. You can also melt chocolate and make some fancy little swirlies to top the berries. All that is completely optional.

Or you can eat them plain and enjoy!
