Ingredients

 

Wrap with bacon

 

Secure with a skewer

 

Put on a rack in a baking pan (foil lined if you are lazy like me and don't like cleaning up baked on messes).

 

Cook until bacon is crispy and sizzling.

 

Drizzle with seasoned butter and prepare to indulge in a delicious treat!

You know that saying bacon makes everything better… I’m pretty sure it’s true.

I don’t even like scallops, but wrapping them in bacon and drizzling them with butter made them quite tasty!

This recipe is easy, simple and fast, so give it a try and enjoy!

Bacon Wrapped Scallops

6 scallops

3 pieces of bacon

1tbsp melted butter

1 tsp seasoning

skewers or toothpicks

Preheat oven to 425 degrees.

Cut bacon strips in half lengthwise. Wrap each scallop with a piece of bacon and secure with a toothpick or skewer. Place on a rack in a roasting pan. Because I am a lazy slug and don’t like cleaning up messy baking pans, I lined mine with foil before I did anything else. Spray your rack with a little Pam to speed up the cleaning process and keep your scallops from sticking.

Place in oven for 15-20 minutes or until bacon is crispy and sizzling.

Melt butter with a teaspoon of seasoning. You can do spicy or mild. I used an all-purpose seasoning (Mrs. Dash works fine).

Pour over scallops and serve.

This recipe would serve two.

Beef Bundles

A few weeks ago, I had a gathering of people at our house and wanted to make something filling that would also fall into a finger food category. With a roast on hand, I decided to just make up a recipe.

It was a pretty good decision, based on the fact there weren’t many of these left after the party.

You could use this as an appetizer or as a main course, depending on how big you make the bundles.

 

Ingredients for Beef Bundles

 

Cook the beef in your slow cooker on low for six to eight hours.

 

When cooked, shred meat with two forks and let cool slightly. Mix with one can of cream of mushroom soup and 1/2 cup grated colby-jack cheese.

Separate a roll of crescent dough then add a heaping spoon of filling to each crescent. Bundle the dough around the filling and press edges to seal.

 

Place on cookie sheet and bake until golden brown.

 

Beef Bundles

1 3-4 pound roast

1 can chicken broth

1 tsp. salt

1 tsp. seasoning

1 can cream of mushroom soup

1/2 cup shredded colby-jack cheese

2 tubes of crescent rolls

Put roast in a slow cooker with salt, seasoning and chicken broth for six to eight hours on low, depending on the size of your roast. I like to stab mine with the thermometer at about five hours to see if we are close to done. If not, I turn the temperature up a bit and let it finish cooking.

Once the meat is cooked, remove from the slow cooker and shred using two forks. (You can do this right before making the bundles of the day before.) Let the meat cool slightly, then mix in one can of cream of mushroom soup and the shredded cheese.

Preheat oven to 350 degrees.

Unroll crescents and separate into individual triangles. Place a heaping spoon of filling into each triangle then fold dough around filling, making a bundle. Pinch to seal edges.

Place on a baking sheet and bake until dough is a golden brown.

Serve and enjoy!

(If you wanted, you could serve with barbecue sauce for dipping.)

I hosted a little get together at my house last week.

It was a finger-food kind of gathering and I decided amidst the butter and sugar and cream, we needed something that resembled a vegetable.

These little cucumber appetizers were so easy to make and pretty tasty if the empty tray was an indication of how well they were received.

Ingredients... plan on two to three of these per person and use ingredients accordingly.

Slice the cucs into 1/2-3/4 inch slices. Uniformity is not my specialty.

Layer, plate and enjoy!

Easy Cucumber Appetizers

Cucumbers

Proscuitto

Mozzarella

Italian Dressing

Dill

Wash the cucumbers and slice into about 1/2 slices. I used mini cucumbers and they were bite-sized perfection. Lightly salt and set aside while you get everything else ready.

I cheated and purchased pre-sliced Mozz cheese and then cut each slice into four little pieces. I layered it on the cucumber followed by just a tiny bite of proscuitto then drizzled with a bit of Caesar Italian dressing. Top it off with a sprig of dill and you are ready to serve.

I made these several hours ahead of time, covered in plastic wrap and left in the fridge until party time. This gave the dressing time to work its magic on the meat and cheese.

Tortilla Roll-Up Appetizers

If you want a simple appetizer that people absolutely can’t stay away from, try this easy recipe. I’ve made it countless times over the years and never have any leftovers.

Warning – we absolutely will not talk about the caloric content of this recipe! And don’t go all healthy-substitute crazy on me here. You have to follow the recipe or it just doesn’t taste right!

Ingredients

Mix up your filling. I know it looks a little... um... interesting.

Please don't be like me and absentmindedly put the meat on first then try to spread filling over the top. Put the filling on the shell, then layer on the meat!

Filling spread out on the shell, then add the meat.

Roll it up tightly.

Wrap tightly in plastic wrap and let set in the fridge for several hours or overnight. The longer it rests, the better the flavor!

Unwrap, slice and enjoy!

Tortilla and Ham Roll-Ups

4 large flour tortilla (or 6-8 smaller ones)

1 large package cream cheese, softened

1/2 cup grated cheddar-jack cheese

1 small can chopped olives

1/4 cup ranch dressing

1 package of ham lunch meat, thinly sliced

In a bowl, combine cream cheese, cheddar-jack cheese, ranch dressing and olives. Mix well then spread over tortilla, going almost to the edges.

Layer on ham then tightly roll up tortillas. Wrap in plastic wrap and refrigerate for several hours or overnight. When you are ready to serve, unwrap, slice into about 1/2-inch wide slices and stand back. You don’t want to get trampled by the crowd as they hurry to devour these. (Unless Captain Cavedweller is there, in which case, linger all you want, he ain’t eating these!).
