This salad is easy to whip together and a perfect go-to for potlucks, picnics or anytime you really don’t want to cook. Add pieces of cooked chicken and you’ve got a meal ready to eat!

Ingredients

 

Microwave vinegar, oil and orange juice. Stir in seasoning packets. Set aside.

Mix oranges with coleslaw (or cabbage). Add in crushed noodles.

 

Pour dressing over salad, stirring well to coat. Cover tightly and refrigerate overnight.

Chinese Noodle Salad

1 bag of coleslaw mix or about six cups of shredded cabbage

2 packages of Ramen Noodles (chicken flavor)

1 large can Mandarin Oranges

1/2 cup sliced almonds

1/2 cup vinegar

2/3 cup oil

Drain oranges, reserving juice in a micro-wave safe bowl. Add oil and vinegar to juice and microwave about a minute, stirring to mix well.  Stir in the seasoning packets from the noodles until well blended. Set aside.

Mix coleslaw with oranges. Crush noodles and add to bowl, uncooked. Pour dressing over the top, mixing well. Cover with plastic wrap and refrigerate overnight. Before serving, give the salad a good mix then stir in almonds and serve!

When I was a young girl, my mom had a circa 1960-something Betty Crocker cook-book for kids that originally belonged to my sister. I glommed onto it once I decided I wanted to bake and create in the kitchen. This was one of the first things I made. Mom also made these pear bunnies for us sometimes and they never failed to make me smile.

Easy and simple, make pear bunnies for Easter and see if your kids aren’t begging for more.

Ingredients - leaf lettuce, a can of pear halves (or fresh pears, cut in half) cottage cheese, cranberries, sliced almonds and Red Hots. You are supposed to use raisins instead of cranberries, but since I hate raisins, my bunnies have bizarre red eyes.

 

Put leaf lettuce on a plate. You can use as many as you like.

 

Place pear half on lettuce, split side down.

 

Add a dollop of cottage cheese at the broad end of the pear for a tail.

 

Stick in sliced almonds for ears, cranberries for eyes and a Red Hot nose.

If you are looking for a colorful side dish to serve this holiday season, try this easy Pasta Ribbon Salad.

 

Ingredients

Cook pasta according to package directions.

 

Slice Olives

 

Toss everything together.

 

I finished the salad off with a bit of freshly grated Parmesan and a sprig of dill.

Pasta Ribbon Salad

1 package Ribbon Pasta

1 can sliced olives

1/4 cup sliced Mazanilla Olives

1/4 cup sliced Kalamata Olives

1 cup Feta cheese, crumbled

1/2 cup Italian Salad Dressing

Cook pasta according to package directions. Cool completly. Add in olives and cheese. Toss with dressing. Chill and serve!

A few years ago, I was looking for a festive, fun salad to make for a holiday dinner. Coming across a recipe for a broccoli cauliflower salad it sounded good right up to the raisins.

I’m not so fond of raisins. Apparently the feeling is mutual. So we avoid each other at all costs. The last time I ate a raisin was when I was 8-years-old and my mom made me eat a bowl of Raisin Bran. I was so sick all day. And we happened to be in Disneyland. It goes without saying, I’ve held a long and ardent grudge against raisins.

I also wasn’t wild about the dressing used on the salad which involved onions (ick!).

So I improvised and this is what I came up with. Even Captain Cavedweller likes it and that is saying a lot!

The colors are fun and festive and really do look pretty on a holiday table.

(Yes, I realize it is a bit early to be thinking about Christmas but I am in the downhill slide of finishing up my Holiday Entertaining tips book so my head has been firmly entrenched in the holidays for weeks, now).

 

 

Broccoli Cauliflower Salad (Christmas Salad)

2 cups of fresh cauliflower, chopped into bite-sized pieces

2 cups of fresh broccoli, chopped into bite-sized pieces

1/2 cup toasted sunflower seeds

1 cup dried cranberries

1/2 cup buttermilk ranch dressing

Cut up broccoli and cauliflower florets, stir in cranberries, sunflower seeds and dressing (I just use the bottled dressing, but you could make your own if you are feeling the need to work extra hard). Sprinkle a few extra seeds and cranberries on top in the center and serve.
