It looks like spring is starting to make an appearance here in our little corner of the world. Daffodils and crocuses are blooming and the promise of warmer, sunnier days ahead is strong.

With the arrival of spring, our tastes also seem to shift from the heavier comfort foods of winter to lighter fare.

This salad is a great blend of flavors that are tangy and fresh. It can serve as a side salad or a main mail.

Gyro Salad with Tzatziki Dressing

Dressing:

1 cucumber, peeled and coarsely shredded

1/2 tsp. salt

3/4 cup plain yogurt

2 tbsp. white vinegar

1/2 tsp. dill weed

SALAD:

1/2 lb. ground beef

1/4 cup chopped onions or onion flakes

1 tsp. all purpose seasoning

1 package of romaine salad blend

2 Roma tomatoes, chopped

1 package of crumbed feta cheese (about four ounces)

1/2 cup pitted Kalamata olives, drained

Toasted Bread Wedges

In a medium bowl, sprinkle salt over cucumber and mix well. Let stand five minutes. Drain.  Stir in remaining dressing ingredients. Cover and refrigerate.

In a large skillet over medium heat, cook beef, onion and seasoning until onions are tender and meat is no longer pink. Drain.

Arrange greens on a large serving platter the top with tomatoes, feta cheese, olives and meat. Spoon dressing over salad. Serve immediately with toasted bread.

If you are in a hurry but want a filling and tasty side dish, this recipe is a snap. If you want to make it into a meal, just add chicken pieces and serve alongside a fresh green salad.

Quick Rice Bake

1 can Cream of Mushroom Soup

1/4 cup thinly sliced celery pieces

2 cups rice, cooked

Mix rice with soup and celery pieces and bake in a greased 9×9 casserole dish at 350 degrees for about 15 minutes, until it thoroughly heated. For some extra gooey goodness, sprinkle with shredded colby-jack or cheddar cheese a few minutes before removing from oven.

Today’s recipe comes from my Mom. She used to make this pleasing dish for a big crowd, but it is so easy to make, you could whip it together anytime you want a delicious and simple meal. It comes together quickly and one of the best things is that you can put it together the night before!

Chicken Enchiladas

3 cups cooked chicken, cut into bite-sized pieces or shredded

1/2 cup chopped celery

1 tsp. onion flakes

1 small can cream of mushroom soup

1 small can cream of chicken soup

1 small can green chiles

1 1/2 cups grated cheddar cheese

8 corn or flour tortillas

Mix chicken with celery, onion flakes, soup and chiles. Layer greased 9 x 13 casserole pan with half the tortillas, and then half the chicken mixture and half the cheese. Repeat the layers again, ended with a topping of cheese. Make the night before and let the flavors mix before baking at 325 degrees for one hour. Note – you can sauté the celery and onion flakes with a dash of chicken stock before adding to the mix if you don’t like your celery quite so crunchy.

January is a great month to dig into my stash of comfort food recipes. When the weather is gloomy, there is nothing like a comfort-food meal to just make the day seem brighter.

One of Hubby’s favorites is salisbury steak. I know there are many, many variations of this recipe, but this is an easy one that we both enjoy.

Salisbury Steak

1 1/2 lbs. ground beef

1 small can cream of mushroom soup

1/2 cup bread crumbs (or Saltine crackers crumbled)

1 egg

1 tsp. onion flakes

1 tsp. all-purpose seasoning (like Mrs. Dash)

Salt and Pepper to taste

1 cup water

In a large bowl, mix together ground beef, egg, bread crumbs, onion flakes, seasoning, salt and pepper. Form into six patties. Combine water and soup in a separate bowl and set aside.

In a large skillet over medium-high heat, brown both sides of the patties. Pour off excess fat.  Pour soup mix over patties, cover and cook for about 20 minutes, stirring occasionally.

This is great served with rice or creamy mashed potatoes.
