Popcorn Cake

PopcornBarThe first year I was away from home on my birthday, my Mom sent me a popcorn cake.  It was a taste of home, fall and love all wrapped up in one fragrantly satisfying bundle.

It seems only appropriate to share this recipe since October is National Popcorn Poppin’ Month.

This is a fun and easy cake to make that little ones especially enjoy. A warning: you will have sticky fingers both in the making and the eating process, but so worth it!

Popcorn Cake

24 cups of popped popcorn*

1 cup of spiced gum drops

1 1/2 cups of peanuts

1 large bag of mini marshmallows

1/2 cup oil

1/2 cup butter

Mix oil, butter and marshmallows in a large bowl. Microwave at 20-30 second increments, stirring between each set until marshmallows and melted and oil and butter are mixed in nicely. (It will still look a little oily). Mix in popped popcorn, peanuts and gum drops. Press into greased bundt or angel food cake pan. Leave standing at room temperature for an hour or so until cake is set then slice and serve. You could also press into balls and wrap individually.

* For a fun variation, use colored popcorn kernels.

Easy Quiche

When I was in college living in a co-ed dorm and getting an education in things that had nothing to do with either my major or minor, a bunch of us girls got together and decided to have a nice party before we all left for the holidays. We all were supposed to contribute one thing to the meal and it needed to be “girlie” food.

I called Mom in  panic with no idea what I could make. She saved the day when she sent me this easy quiche recipe. It was a hit at the party, and every time I’ve made it over the years.

Wonderful for breakfast, brunch, luncheons or dinners, it is so good and simple to make!

Quiche
3 eggs

1 1/2 cups cream

1/4 tsp. salt

1 cup shredded cheddar or colby-jack

1/2 cup crumbled cooked bacon or diced ham

1/2 tsp. onion flakes

Prepared pie crust in 9 inch pie pan. Beat the eggs, add in cream and salt.  Sprinkle cheese and bacon over pie crust. Pour egg mixture over the top and bake at 350 degrees for 40-45 minutes or until knife inserted comes out clean. Enjoy!

freeimages.co.uk food imagesWhen the garden is filled with luscious, ripe red tomatoes and oodles of crunchy cucumbers, I love to pick a few of each and put them together in a refreshing summer salad.

I made this salad for guests recently and it was received enthusiastically. Then when a friend invited us for lunch a few days ago, she made the salad for us. I’m sure it tasted even better when someone else made it!

There is nothing quite like a vine-ripened tomato that has soaked up the best of summer’s rays, drank in the morning dew and the rain from scattered showers, and sits waiting at the peak of perfection to be enjoyed and savored.

You can make this salad for one or for a group, just the proportions the same.

Fresh Summer Salad

3 cups  cucumber, peeled and sliced

3 cups tomato, cut into bite-sized pieces

1cup crumbled feta cheese

1/2 cup Italian salad dressing

Mix together and serve immediately.

lemon-tartsA really easy and tasty dessert that can be thrown together in a jiffy for last minute entertaining is this recipe for lemon tarts. Great anytime, they are  especially tasty on these hot summer days.

Easy Lemon Tarts

1 small box lemon pudding

whipping cream, whipped

2 packages frozen mini phyllo shells

Make the pudding according to package directions. I prefer the flavor and texture of cooked pudding, but if you are really in a hurry, use instant. Once the pudding is made, chill. The phyllo shells I purchase have 15 in a box and two boxes comes out proportionately to the pudding. You can let the shells thaw  and then fill or you can put them into the oven for a few minutes to make them crispy. Fill the shells with the chilled pudding. Put on a dollop of whipped cream (if you are in a big hurry, use Reddi-Whip or frozen dairy topping) then finish off with a fresh raspberry.

Although very simple and easy to make, these little tarts look like you invested a lot of time in them.
