Browsing on Pinterest the other day, I was looking for a brownie recipe that was new and exciting and different.

I found approximately 297 I wanted to try right then, but instead decided to combine a couple of recipes I found and see how it went.

It went well. Really well. Quite tasty, even.

So here is what I came up with!

Ingredients – minus the powdered sugar because I’m a dork and forget to get it out when I took the photo.

 

Mix brownies according to package directions and pour half of batter into prepared baking pan.

 

Combine coconut, cream cheese, sugar and vanilla until well blended.

 

Spread on top of brownie batter.

 

Spoon remaining batter on top of coconut and bake until set – about 35 minutes at 350 degrees.

 

Pour frosting over brownies, top with almonds and enjoy!

Coconut Cream Brownies

1 box brownie mix

1 cup sweetened flake coconut

1 8-ounce package cream cheese, softened

1/2 cup powdered sugar

1 tsp. vanilla

1 can chocolate frosting

sliced almonds

Preheat oven to 350 degrees.

Mix brownies according to package directions. Spread half of mix in a greased 8 1/2 x 14 baking pan. Mix coconut, cream cheese, sugar and vanilla until well blended. Spoon over brownie batter. Top with remaining batter and bake at 350 degrees for about 30-35 minutes or until brownie batter is set. Do not over cook. You can take this out just before it seems quiet done and it should be perfect.

Let cool.

Microwave about 1/2 to 2/3 cup of the frosting for 10 seconds and pour over cooled brownies. Top with sliced almonds and serve.

I stole this idea from pin on Pinterest that used Rice Krispies. This was a fun and flavorful alternative. Enjoy!

Ingredients

Melt marshmallows with oil or butter, like you would for Rice Krispie Treats.

 

Stir in cereal until well-coated.

Grease your hands and shape cereal mixture into egg-shaped treats.

 

Then if you want to get all fancy-pants, you can add frosting stripes, sprinkles and fun accents.

Easter nest cookies made with Chinese noodles and some sort of chip are a fun and easy treat. I’ve seen these made with chocolate and butterscotch chips, but never white chocolate, so I decide to give it a whirl.

It whirled really well.

Try these fast-to-make goodies for a kid (and adult) pleasing surprise.

Ingredients

 

Melt white chocolate chips with just a little bit of cream. I nuked mine for about 10 seconds in the microwave, stirred and continued nuking in short intervals until melted.

 

Place coconut in a ziploc bag.

 

Sprinkle in a little food coloring.

 

Seal bag and work around massage bag to disperse coloring throughout the coconut without turning your fingers sickly shade of green.

 

Melt chips. Use melting discs for best results. If you're like me and don't have any when you get the wild idea to make these, chips work fine, just remember you'll have to stir the lumps out.

 

Coat noodles with the melted chocolate then drop into nest-sized lumps onto a piece of waxed paper or parchment (or foil if you happen to be out of the previous options).

 

Fill the center of your nest with coconut then top with jelly beans.

When I was in the sixth grade we had a few cooking lessons at school. This involved a hotplate and some wonderful mothers who came and helped a bunch of unruly youth make some tasty treats.

One of the things we made were no-bake cookies called Fudgie Wudgies. I remember many details about the day we made them like the smell of the chocolate, the taste of the delicious, rich treat. It may have been the last chocolate thing I ate before my mother decided to bring my world crashing down around my ears and declare that I was allergic to chocolate. I spent the next  12 years in a sad, chocolate-deprived state (thanks, Mom!) which is one of the reasons I am a complete chocolate addict now.

If you need a quick but tasty chocolate fix, these cookies are perfect. There are many variations on the basic ingredients, but these cookies are so yummy and take just a few minutes to make. Literally, you make them, clean up the mess and be sitting with your feet up in about 15 minutes time-frame.

Simple Ingredients

 

Combine sugar, cocoa powder, butter and milk in heavy saucepan.

 

Stir to blend ingredients over medium heat.

 

Bring to a full boil and boil hard for a minute, stirring constantly. If you don't stir, it could stick and scorch which would be tragic.

 

Remove from heat and add oatmeal, coconut and vanilla.

 

Drop by spoonful onto waxed or parchment paper. If you want them to be uniform and pretty, use the back of your spoon to smooth them out. I'd rather eat them than make them perfect, though. But that's just me - the chocoholic.

 

Ta-Da! Enjoy!

Fudgie Wudgies (No-Bake Cookies)

2 cups sugar
4 tbsp. cocoa powder
1/2 cup milk
1/2 cup butter
2 cup oatmeal
1/2 cup coconut
1 tsp. vanilla

Combine sugar, cocoa, milk and butter in heavy saucepan. Over medium heat, stir until blended. Continue stirring and  bring to a hard boil. Let boil for a minute. Remove from heat, add oatmeal, coconut, vanilla, mixing well.
Drop by spoon-full on waxed paper or parchment paper. Try to wait for them to cool before devouring.
